So you must know what February 26th is? We thought EVERYONE knew! It’s actually ‘Pistachio Day’ - we know, how do we find these right? Anyway, we can’t wait to try out this delicious sounding recipe (from tasteofhome.com), using pistachio nuts and the fish, roughy to make Pistachio-Crusted Fish.
Cooking Time: Prep time 15 mins, cooking time 10 mins
Serves: 4, super easy
1 egg white, beaten
1/2 cup of pistachios, finely chopped
1/3 cup of dry bread crumbs
1/4 cup of minced fresh parsley
1/2 teaspoon of pepper
1/4 teaspoon of salt
4 orange roughy fillets (6oz each)
4 teaspoons of butter, melted
Equipment Needed: Chopping knife, bowl, baking sheet, oven tray, cooking spray, fork
Place the egg white in a shallow bowl. Combine the pistachios, bread crumbs, parsley, pepper and salt in another shallow bowl. Dip fillets in the egg white, then the pistachio mixture.
Place the fish on a baking sheet coated with cooking spray. Drizzle with butter. Bake at 450° for 8-10 minutes or until fish flakes easily with a fork.
