A vegetable which, in our opinion, seems to get a lot of ‘flack’. We at faithtable are actually big fans of kale!
Kale could be classed as the ultimate superfood, but so can most dark, leafy greens such as swiss chard, collards, mustards (including radish greens), spinach and cabbages. You may as well add broccoli onto that list as well.
These dark vegetables are loaded with vitamins A, C and K, as well as fibre, calcium (?!) and other minerals.
