SPRING ZING: Fruit Punch Mocktail

Non-alcoholic fruit punch recipe

As the days get longer and sunnier, we find ourselves in search of recipes to give you that real Spring feeling… This fruit punch recipe by culinaryhill.com is non-alcoholic (but feel free to add something else to pack even MORE punch if need be!).

Cooking Time: Preparation time 5 mins, cooking time 5 mins, freezing time 4 hrs, 10 mins

Serves: 20, very easy

Ingredients:

2 (6oz) cans of frozen orange juice concentrate - thawed

2 (6 oz) cans of frozen lemonade concentrate - thawed

1 (48oz) can of pineapple juice

3 cups of water

3 cups of sugar

2 pints of strawberries - hulled

1 (1 litre) bottle of lemon-lime soda such as Sprite

Equipment Needed: Large bowl, wooden spoon, heavy saucepan, ring mold

Combine the orange juice, lemonade, and pineapple juice and stir well.

Bring 3 cups water and the sugar to a boil in a heavy saucepan and boil until sugar is dissolved, about 5 minutes. Let cool. Add the syrup to the fruit juices.

Place the whole strawberries into a ring mold. Pour in enough fruit juice to fill the mold. Freeze. Refrigerate the remaining juice.

When ready to serve, pour the fruit juice into a punch bowl and add the soda. Float the strawberry ice ring in the punch.
