WAFFLE DAY: Homemade Banana Waffles
We don’t really need an excuse to post a waffle recipe but today is ‘Waffle Day’! And here is a recipe from servedfromscratch.com for mouthwatering ‘Banana Waffles - breakfast tomorrow anyone?
Cooking Time: Preparation time 10 mins, cooking time 15 mins
Serves: 1 - 2, super easy
1 - 1 1/2 cups of flour. Start with 1 cup but if the batter seems too wet, add another 1/2 cup
2 tsps of baking powder
2 tbsps of sugar
Dash of salt
A pinch of nutmeg
2 egg yolks
1 cup of milk
1/2 tsp of vanilla
1 cup of mashed bananas
6 tbsps of butter - melted
1 large banana sliced in rounds\
Nuts - as required
Equipment Needed: Waffle iron, 2 x medium bowls, wooden spoon, whisk
Preheat waffle iron. Stir together flour, baking powder, salt, sugar, and nutmeg.
Beat egg yolks in another bowl with milk and vanilla. Stir in the flour mixture until blended. Stir in mashed bananas and butter.
Make waffles in waffle iron. Top with sliced bananas, nuts and maple syrup. Or melted chocolate. Or whipped cream. Or honey. Or ice cream- whatever you want!
