VEGE SNACK: Filled Avocados

As huge fans of the humble avocado, we feel we have done an utter disservice to our followers by having not included a recipe yet! So here’s something a bit unusual for you from our own archives - filled avocados - remember, you can adjust the fillings to suit your preferences! Packed with healthy fats and perfect as a snack or breakfast.

Cooking Time: Preparation time 5 mins, cooking time 20 mins

Serves: 4 halves, easy

Ingredients:

2 avocados

2 oz smoked salmon

2 eggs

Salt

Black pepper

Handful of red and yellow cherry tomatoes

Handful of chopped chives

Handful of grated cheddar cheese

Handful of chopped coriander

Equipment Needed: Chopping knife, baking sheet

Preheat the oven to 425°F. Halve the avocados remove the stone. If the hole looks too small, scoop out a small bit at a time until it can hold an egg. Arrange the avocado halves on a baking sheet, and line the hollows with the ingredients of your choice. Add salt and fresh cracked black pepper on top of the eggs, to taste. Gently place in the oven and bake for about 15-20 minutes. Serve warm.
