SUPERFOOD: Salt & Cinnamon Kale Crisps

Another seasonal food… Kale. The nutrients in kale help boost wellbeing and prevent a range of health problems. It contains fibre, antioxidants, calcium, and vitamin K, among others. Even the chlorophyll in kale is rumoured to have health benefits. It is also a good source of vitamin C and iron. We think we’ve justified eating it so try out this Jamie Oliver recipe for a quick snack (without the guilt of standard crisps!), Salt and Cinnamon Kale Crisps. So simple, you wish you’d thought of it first don’t you?

Cooking Time: 15 mins

Serves: 8, far too easy!

Ingredients:

12 large whole kale leaves, (200g) 

3 tbsps olive oil 

1/2 tbsp sugar 

1/2 tbsp cinnamon

Equipment Needed: Chopping knife, bowl, spoon, 2 x baking trays

Preheat the oven to 200ºC/gas 6. Rinse and dry the kale leaves before removing most of the centre stalk, leaving long, thin pieces of kale. Toss the kale in the oil, then sprinkle with the sugar, cinnamon and ½ tablespoon of sea salt.

Arrange the leaves in a single layer on a couple of baking trays and bake for 5 minutes, until crisp. Transfer the kale to a rack to cool, then serve.
