WORLD CHERRY PIE DAY: Cherry Pie
More of a Summer recipe, but World Cherry Pie Day warrants today’s super sweet recipe! From tamingtwins.com, this is an easy and delicious recipe – made with juicy, fresh cherries and including a beautiful lattice top should you wish to give it a go!
Cooking Time: Preparation time 30 mins, cooking time 1 hr
Serves: 8, easy
1 kg fresh cherries
250g of caster sugar
3 of tbsps of cornflour
1 tsp of vanilla extract
1 tsp of ground cinnamon
Juice of one lemon
500g of ready-made shortcrust pastry
Equipment Needed: Pan, wooden spoon, pie dish, basting brush, chopping knife
Stone the cherries. Put them into a pan with the sugar, cornflour, vanilla, cinnamon and lemon juice. Heat over a medium heat for about 15 minutes, gently stirring. When the sauce has thickened, remove from the heat and allow to cool fully. Preheat oven to 180C. Line the bottom of a pie dish with half of the pastry.
Add the cold cherry filling. Top the pie (making a lattice should you wish). Brush with beaten egg. Bake for about 1 hour until cooked through.
