JANUARY DETOX RECIPE: Paleo Blueberry Muffins

Blueberry Muffin Recipe

As part of our continuing January health kick, check out these Paleo Blueberry Muffins - delicious for those of you with a sweet tooth who are looking for more of a guilt-free treat!

Cooking Time: Preparation time 15 mins, cooking time 25 mins

Makes: 12 muffins, easy

Ingredients:

250g fine almond flour

250g caster sugar

2 eggs

2 teaspoons baking powder

1/2 teaspoon salt

225g fresh blueberries

1/4 cup honey

2 tbsps coconut oil, melted

1 tbsp lemon juice

1 tsp organic vanilla extract

Equipment Needed: Muffin tin, baking parchment, large bowl, medium bowl, wooden spoon, scoop, toothpick, wire rack

Preheat oven to 180c degrees and line your muffin tin. Combine dry ingredients in one bowl, wet ingredients in another and then stir the two mixtures together - add the blueberries and fold in. Fill the muffin cups 3/4 full. Bake for 25 minutes, until golden brown and toothpick inserted in centre comes out clean. Cool on wire rack.
