VEGAN RECIPE: Courgette, Pea & Mint Fritters

We decided to give this one a go ourselves! It’s amazing what you can find when you’re attempting #Veganuary and doing your best to discover ingredients (see what we used for binding) in the local shops and supermarkets! Sometimes you do have to search further afield. A healthy and light recipe, this is the last of our series from Hodmedod’s - courgette, pea and mint fritters!

Cooking Time: Preparation time 20 mins, cooking time 10 mins

Serves: 4 large or 6 small, easy

Ingredients:

2 large peeled courgettes

150g cooked petit pois

140g green or yellow pea flour

1 tbsp Carmelina Seed, shake in 3tbsp of warm water for 30 mins (or another vegan substitute for egg)

Pinch of salt

Cracked black pepper

Coconut oil for frying

Equipment Needed: Potato peeler, grater, chopping knife, large bowl, medium bowl, tablespoon, wooden spoon, spatula, frying pan

Grate the courgettes into a large bowl and add a pinch of salt, stir and leave for ten minutes. Meanwhile, mix the other ingredients in a bowl (bar the oil).

Squeeze the water out of the courgette (I used my hands) and then add to the other ingredients and combine thoroughly. Heat the oil on medium high and then spoon tablespoons of the fritter mixture to the pan (using a back of a wooden spoon to flatten them).

Cook for a few minutes on each side and eat piping hot (or store for up to 3 days).
