Hummus Recipe

A twist on a Middle Eastern classic, Fast Fava Bean Hummus. Containing an adventurous alternative to standard chickpeas, fava beans don’t even need soaking! This healthy recipe (courtesy of Hodmedod’s) can be made entirely from scratch in less than an hour! If this isn’t a dish to give a go then we don’t know what is!

Cooking time: Preparation time 10 mins, cooking time 30 mins

Serves: 6+, easy

100g split dried fava beans

2 tbsp tahini

2 tbsp olive oil

2 tbsps lemon juice

1 small clove of garlic

Half tsp mild dried chilli

Half tsp lemon zest

1 tbsp chopped parsley and/or mint

Smoked paprika (for garnish)

Equipment Needed: Pan, tablespoon, teaspoon, chopping knife, bowl

Cover the fava beans with water in a pan and boil for 30 minutes (top up with water if required). This will give your hummus a coarse consistency, cook for another ten minutes if you like your hummus to be a smoother paste.

At the same time, mix the tahini, olive oil and lemon juice, stirring well for a creamier consistency. Add the chilli, lemon zest and your parsley (or mint). Crush and chop the garlic to add to this mixture.

Drain the beans and place in a bowl, stirring in the tahini dressing with them (a food processor will make this even creamier!). Drizzle with olive oil, chopped parsley and smoked paprika - best served warm!
