CHANUKAH RECIPE: Lokshen Kugel

Kugel is a baked pudding or casserole most commonly made from egg noodles or potato.  The word “kugel” means “sphere, globe, or ball”, the Yiddish name originated as a reference to the round, puffed-up shape of the original dishes made hundreds of years ago and passed down by our ancestors… and this week’s version by foodnetwork.co.uk makes another popular dish idea for Chanukah!

Serves: 4, easy

Cooking Time: 5 mins preparation time, 45 mins cooking time

Ingredients:

225g egg noodles

55g butter, melted

450g cottage cheese

500g soured cream

100g sugar

6 eggs

Salted water

1 tsp ground cinnamon

75g sultanas

Equipment Needed: Medium sized pan, large mixing bowl, spoon, greased 20cm by 30cm baking dish

Preheat the oven to 190C/Gas 5. Meanwhile, boil the noodles in salted water for about 4 minutes. 

Drain the noodles and combine in a large mixing bowl with the remaining ingredients. Pour into a greased 20cm by 30cm baking dish. 

Bake until the sauce is set and the top is golden brown, about 30 to 45 minutes.
