LATEST RECIPE: Leek Omelette

Kosher food blog London

Leeks may seem like any other vegetable to some, but in the Jewish religion they actually signify the ‘warding off of one’s enemies’ - apart from being delicious when cooked right, this is just another reason to eat them!

Cooking Time: 5 mins preparation time, 15 mins cooking time

1lb leeks chopped

6 x eggs beaten

5 tbsp vegetable oil

Equipment: Knife, whisk, 2 x medium bowls, skillet, wooden spoon

In a skillet, heat 2 x tablespoons of vegetable oil, add the leeks and sauté for 2/3 minutes. Add salt.

In a medium bowl, combine the leeks and eggs. Mix well.

Heat the rest of the oil and pour in the egg batter.

Cook 3/4 minutes on each side.
